Behind Every Number: A History of the Holocaust through Stories with Julie Weaver
Mondays: February 26th, March 4th, 11th and 18th and Tuesday, March 26th
This course will cover the history of the Holocaust, including the long saga of anti-Semitism, the rise of the Nazi Party, and the implementation of the Final Solution, with the goal of understanding the processes that led to the Holocaust and leading to reflection on our personal roles in society.  We will use Holocaust literature as a guide to investigating true stories and learning about individual experiences within the context of the history of World War II and the Holocaust.  Learners will make a personal connection with an individual involved in the Holocaust through stories and artifacts to impart a deeper understanding of the effects of various events occurring in Europe before and during World War II.  The course will culminate in a visit with a Holocaust survivor and an optional trip to Auschwitz in Poland at the beginning of the summer of 2024. “Never forget. Never again.”

Lessons in Chemistry: The Science Behind the Food with Sarah Pulliam
Tuesdays: February 27th, March 5th, 12th and 19th
Inspired by the New York Times best-seller by Bonnie Garmus and the principles presented in Samin Nosrat’s “Salt Fat Acid Heat,” this class explores the molecular wonders of food. From the science behind fermentation to denaturing proteins and acid-base reactions, culinary arts have truly evolved into awe-inspiring scientific approaches like molecular gastronomy. Come learn with us as we explore everyday kitchen chemistry and experiment like creative chefs in top kitchens around the world!  We will make edible treats weekly based on the concepts we discuss including: the science of taste, fermentation, emulsions, spherification, protein denaturation, Malliard reaction, sugar manipulation, & acids and bases.

Ratatouille: French and Italian Cooking with Isabella Runge
Wednesdays: February 28th, March 6th, 13th, 20th and 27th
Embark on a delectable journey through the heart of French and Italian kitchens. As you whisk, chop, and simmer, savor the fusion of language and culinary skills. "Au menu du jour": pasta fresca, eggplant parmesan, quiches, ... "La cucina è l'anima di una cultura-cooking is the soul of a culture-la cuisine reflète la culture."

A Knight Out with Veronica Hallock
Wednesdays: February 28th and March 6th
Enjoy a "Knight" out. Choose from one of four guided paintings to create. Your instructor will contact you after registration, you will decide which painting you'd like to choose, and if you'd like a loose sketch or a blank canvas to create on. Students are encouraged to bring their own beverages and snack. Enjoy the evening with friends or partners to enjoy a creative KNIGHT out!

Empathy: The Art and Heart of Fiction with Martha Stickle
Mondays: February 26th and March 4th and 11th
You already know that reading makes you smarter, helps you understand the world, and gives you endless conversation starters, but did you know reading fiction actually makes you a kinder human being? In this class, we’ll explore the latest research about how book study shapes empathy, explore middle-grade, YA, and adult books that serve as windows and mirrors, and formulate reading plans to make for a more empathetic, gentler world. Some outside reading will be encouraged for our book discussions.

Math (and Merlot) with the Moroneys (Joan and James)
Tuesdays: February 27th and March 5th
Discover your inner "graphic" designer! Join Joan and James Moroney for two nights of creativity using graphing technology. Participants will work on their device to create an original art piece using mathematical graphs. The design will then be sent to the Fab Shop laser cutter to create an ornament or other souvenir that can be printed on site. Participants can expect to learn a number of different mathematical functions and how to create pictures on a coordinate grid using those functions. While math is always a very serious subject, we understand that it can be more palatable with choice snacks and beverages. Please feel free to bring refreshments!

Fun in the Mud: Conversation and Clay with KK Koprowski
Thursdays: February 29th, March 7th, 14th and 21st
Come play with clay! Immerse yourself in a pottery experience that will focus on the basics of clay hand-building and glazing. Create a one-of-a-kind piece that is aesthetically pleasing and functional –a pinch pot with lid and/or a face jug. All skill levels are welcome; no experience is necessary.

Salsa, Sazon, y Espanol: Unearthing the Treasures of Colombia and Chile with Chantal Castille and Jeannette Thompson
Thursdays: February 29th, March 7th, 14th, 21st and 28th
Embark on a thrilling cultural journey in this immersive 5-day class. Get ready to unlock the vibrant spirit of Latin America as we explore the richness of Colombian and Chilean traditions through the enchanting trifecta of music, cuisine, and language.

Join us for "Salsa, Sazón, y Español '' for a hands-on and impactful cultural experience while sipping on the essence of Colombian coffee and marveling at the geological wonders that connect the northernmost to the southernmost reaches of Latin America. 

Each class is carefully curated to offer a variety of topics that will be new and exciting for participants. From cooking and dancing to learning about the rich culture, there will be something for everyone. Resources will be provided for those interested in exploring and pursuing learning Spanish long-term.
